This definitely doesn’t class as a recipe. More something cheap, fun and edible to do with the kids. Cornflakes and peanut butter were staple ingredients of my original £10 a week shop, and these treats were the product of a rainy day at home with a toddler and a desire for something sweet and delicious. Small Boy called them ‘My Cakeys’, hence the name.

Makes 30 small cornflake cakes:

100g white chocolate
1 heaped tablespoon peanut butter
50g cornflakes, crushed

Break the chocolate up into a microwaveable bowl. Add the peanut butter. Put the bowl in the microwave on a low or defrost setting for 2 minutes to melt. Do NOT be tempted to put it in on a higher heat to rush it – white chocolate burns easily, stinks, and curdles. It’s just two minutes, tough it out.

Stir the melted white chocolate and peanut butter together until well mixed and an even beige colour.

Crush the cornflakes into the bowl, adding a handful at a time, and stir in. Keep adding cornflakes until you can’t coat them all any more in the peanut butter and chocolate mixture. Spoon heaped teaspoon-sized dollops onto a very lightly greased baking tray or onto baking paper.

Allow to set. If you want them RIGHT NOW, pop the tray in the fridge for 10 minutes.

I really hope that you can make some money out of what you do because I think that given the double dip recession people are struggling and find your ideas inspirational.     • Hi Emily, thanks for your comment! It has been suggested I write a book (cookery book anyway)! I’m glad my recipes help, I’ve been cooking cheap, nutritious food for me and Small Boy out of necessity for over a year now so it’s nice to know other people can benefit from it.   5. You are a life saver! I need to cut down our families food bill (not that we spend a lot anymore) and as I’ve got a fussy family I was worried about getting decent nutrition and bland boring food. No more! You recipes all sound fab!

  8. I’m from Melbourne and being on one income I’m very careful with money, I came to you via a link from an Aussie website to Cornwall and then clicked on you. I was amazed at how tough things seem to be over there, good on you for taking a stand and helping yourself rather than just moaning about how tough things are, I’ve ‘liked your blog’ and have spread the word through the aussie cheapskating community.   9. Yum good idea I would be using dark chocolate and melted butter instead of peanut butter so will have to try the peanut butter instead

  10. Try mixing slightly crushed salted peanuts into the white chocolate – totally addictive and not exactly unposh, at least over here in not-yet-austere Switzerland …
