    Fantastic blog and love the recipes; This week I turned your kidney bean burger mix into mini-pasties using home-made shortcrust pastry (flour, marg, water) and they were fab! I ate them cold with a blob of mango chutney. Thank you.

    • Hi, Tetris, what a great idea! Would you give us some more details about the mini-pasties?
      How thin do you roll the pastry?
      What size/shape do you make the pastry?
      Do you put raw or cooked bean burger filling inside the pastry?
      How much filling is good to put in each pastry?
      How long and at what temperature do you cook the pasties?
      Do they need to be flipped over while cooking?

      • Honestly, they were lovely. Yes I cooked the burger mix first by kind of stir frying in the pan as opposed to cooking as burgers.

        I use this basic shortcrust pastry recipe:

        225g Plain flour
        A pinch of salt
        100g fat
        Cold water to mix
        Add 20g of grated cheese if you prefer cheese pastry.
        Mix the flour and salt in a large bowl. Rub in the fat until the mixture resembles breadcrumbs. Add cheese if using. Stir in just enough cold water to form a stiff dough. Wrap the dough in cling film and allow to rest in the fridge for at least 30 mins.

        I rolled the pasty to around 3mm thick and used my largest scone cutter to create disks. A large class will also do the trick.

        I put a dollop of cooled kidney bean mixture in the middle and topped with another pasty disk. I them squished the edges together using a fork.

        Cooked for around 12 mins at 200 degrees C. I didn’t flip them over.

        Enjoy hot or cold.

      • Can I use this as an additional idea for the recipe? I’ll credit you – I just love things that can be so versatile and people keep asking about things ‘for lunchboxes’ – these would be perfect!

      • Of course! But maybe try them out yourself first to see if you like them.
        I’ve just had a baby and am seriously short on time during the day so they were perfect to snack on.

  3. I’m sorry Jack, it’s a wonderful thing to sacrifice oneself for pointing out social issues, but this should not be, you being hungry. I have enough to spare. Loads of caring people do for that matter.

    Don’t compromise your health.

    What do you need? Your diet is not enough.

  4. I think you are incredible and so inspiring. I have started using chicken bones and boiling them up yo make stock, which I then add all the sad looking veggies at the bottom of the fridge to make soup. Sometimes I add tin of cheap tomatoes and some chilli powder. Not sure how much it costs as different each time depending what is available, but know it is cheap and very tasty and filling.

    Going to try your carrot burgers this weekend, they look delicious!
