Oh yummy! Beetroot is such an undervalued veg – maybe it is all those beetroot and celery salads we were forced to eat at harvest festival gatherings as children ( or am I just showing my age …) However, Jack, I do think you should issue a health warning with beetrootcentric recipes.I once ate a beetroot risotto that turned my poo purple!
