Thrupenny PBJ Cookies, 3p [A Girl Called Jack]

This afternoon one of my readers got in touch via Twitter to ask me how to make these cookies vegan, for a friend. This is one of my favourite recipes for a rainy-day activity with my small boy, and as the weather draws in around us and we will be looking for more baking days than beach days, it seemed as good a time as any to convert it for my vegan friends. If you don’t have self raising flour kicking about, just use plain flour and add 1 level teaspoon of baking powder instead. To make these gluten free, replace the flour with any gluten free flour blend, or ground almonds. This recipe first appeared in ‘A Girl Called Jack’. Ping Porridge, 3p [Cooking On A Bootstrap]

Ping porridge is so called because it can be made in a microwave, on the move, and is perfect in its portability. Grab a Tupperware-style container with a lid, a permanent marker and some oats, and you’re good to go. The adornments and accoutrements from there on are on are up to you. I find a taller container better for this, for accuracy, but if you don’t mind using a squat takeaway carton or similar, use whatever you prefer. I like to add apple and ground cinnamon to mine in the colder months, or grated dark chocolate and a few frozen berries, or tinned pears. Have fun with it – use it as a base and play with it as much or as little as you like. Serves 1, from 3p. School Dinner Days Jam Sponge, 23p [A Girl Called Jack]

90p for 4 at 23p each 100g self raising flour, 4p (65p/1.5kg) 70g butter, 34p (£1.20/250g) 2 eggs, 44p (£2.65/12 free range) 50g sugar, 5p (89p/kg) 4 heaped teaspoons of jam, 3p (29p/454g) Place the butter in a microwaveable dish and heat on the defrost setting for 30 seconds until soft. Transfer to a large mixing bowl. Add the flour and sugar, and break the eggs in. Mix well with a fork or wooden spoon to create a smooth batter. Lightly grease each of your pudding tins with a little extra butter to stop the puddings from sticking to the sides – which will ruin a seriously good dessert! Dollop a generous blob of jam in the bottom of each pudding tin. Spoon batter on top of the jam until each tin is approx 2/3 full. Cook in the centre of the oven for 30 minutes at 170C. They should be risen, light and golden, and should come away from the tin easily to serve. Tip into a bowl to serve. Can be served with …

Some people say socca, some say farinata; I decided to christen my breakfast this morning ‘gramcake’ – a pancake made with gram flour and little else. I can’t believe it’s taken me so long to crack into my bag of gram flour, seeing it ticks all of my culinary boxes – it’s high in protein, versatile, and I can bake with it! All of which make me very happy indeed. This simple recipe made for a very satisfying breakfast – you can amend the spices and flavours to whatever you like, as the base is slightly sweet and nutty, so will complement all manner of things. Mushroom Mac ‘n’ Cheese, 42p [from ‘Veganish’]

This is one of my favourite comfort meals, quick to assemble, using ingredients that I generally have kicking about the house, and can just be slung in the oven and forgotten about, left to slowly pull itself together in a haze of blissful creamy soft salty rich glorious goodness. I’ve just polished off my second bowl of it, and frankly, it’s too good not to share with you all, so here it is. It’s easy to make it vegan – replace the hard strong cheese and mozzarella with Violife or something similar, and the milk with coconut or almond or soya milk, depending on what you prefer. It’s easy to throw together, and the reward of a deep bowl of melting goodness far outweighs the minimal effort involved in making it. I consider this an essential part of my repertoire these days, and barely a week goes by without it. Whirlybuns, 11p [Cooking On A Bootstrap]

These little weighty wistful whirls of whimsy came about entirely by accident. I was going to stay with friends in Manchester for the weekend, to all fling our small boys at one another for a raucous time, and I never like to accept hospitality empty handed. So, I set about making a hulking great fruit bread big enough to energise 3 grown men, 3 grown women, and 3 small and boisterous boys. I mixed it, kneaded it, left it to rise…and promptly forgot all about it until I was halfway across the country. Silly me. I came home to find it fermenting beautifully, tickling the top of the teatowel flung over the top of it. I gave it a ginger sniff, it smelled a lot like sourdough. 5 Ingredient Salted Caramel Chocolate Mocha Yule Log, 38p

This is a fairly cheeky little recipe, mostly because it involves very little work at all – and looks and tastes far more impressive than it should do, considering the sum of its parts. I should confess I didn’t make the Yule log in the centre; I bought one from Asda on a whim and made it better. I’m a busy person, and also, I’ve never successfully managed to roll a Swiss roll up without smashing the whole thing to bits with my clod-handed impatience, so I wasn’t going to take the risk. The good thing is, Asda Swiss rolls (and other premade brands are available, I just live near Asda) are alright; the right side of soft, generous with the buttercream swirl, and left out on the counter all night by accident, they stay pretty moist and squishy. A comforting classic that can be made easily with vegetarian sausages, if you like. My Small Boy loves this for his dinner, and so did I when I was his age! ‘If you ever see me eating sweet potato mash out of a saucepan, you know it’s bad news’, is a phrase that most of my friends are familiar with. Sweet potato mash with chilli and cheese is my go-to tragedy food, spooned straight from the saucepan whilst watching many a re-run of old sitcoms and new comedies. It’s simple, sweet, quick and comforting. Here I’ve topped it with another favourite – firecracker sausages, which work just as well with veggie sausages! If the double chilli hit is too much, eliminate it from the sausages but keep it in the mash. I made this imitation of a breakfast pot I saw in a high-street coffee shop, then worked out that it had cost me a sixth of the price it was selling for on the high street! I included a seeds-and-fruit adornment in homage to the original, and it works well with any mixture of dried fruit and nuts you have at your disposal, but if you don’t have any, that’s fine too, it’s just for show really.
