Spiced Vegan Banana Bread, 11p

I almost had the audacity to call this recipe ‘Christmas-spiced Banana Bread’ as I am currently testing some new recipes for a December project (more on that below) but I didn’t think I could cope with the outrage of the Internet if I dared use the C-word halfway through September. So instead, euphemistically, this is an Autumn-spiced banana bread, warming, comforting, and pull-your-jumper-around-you warming delicious bliss. Based on the vegan banana bread recipe from A Girl Called Jack, but better. For best results you will need a small powerful blender to grind the spices into the sugar; I have used this one for years and absolutely swear by it as a blender, smoothie maker, curry paste machine and spice grinder, so it’s worth a look. Peanut Butter & Banana Superpower Muffins, 10p

What do you do when you have a pile of black bananas sitting in the fruit bowl? I don’t even know how this happens – I generally work from home, bananas are my go-to snack because I can reach them and don’t have to do anything except peel them and shove them in. Sometimes they get sliced and flung in the oven to make dried bananas for the kids, sometimes I whizz them with yoghurt, milk and oats for a breakfast smoothie, but today I fancied neither of those things. Banana Pancakes

What do you make for breakfast when you have bananas, eggs, milk and flour? Banana pancakes of course! Ingredients (made 6 good sized pancakes.) Quick ‘n’ Hot Banana Pot, 18p

It would be remiss of me not to include this ‘not really a recipe’, as I have eaten it almost every day since the microwave project began. It came around by accident, like so many of these things do – I was trying to make banana chips in the microwave and ended up with a hot banana mush… Undeterred, I scraped it up with a spoon and sighed to myself in a small blissful moment, at my accidental mid morning dessert hot, sweet, meltingly soft banana. The next day, I sliced the banana straight into a ramekin dish – all thought of banana chips banished now, I had to have this again. By day three, I was stirring in two squares of dark chocolate. Peanut Butter Granola, 8p

I first made this for myself as I love peanut butter in the mornings, but not having a toaster, popping bread under the grill inevitably goes wrong when you have a child to get washed and socked and shoed in the mornings – so I cobbled this together and bunged it in a big jar. Perfect with hot milk, or cold, or even pop it in the microwave for a minute for a warm, soft, stodgy, comforting start to your day. There are endless variations to this too, just add a good oil, like coconut, in place of the peanut butter to hold your oats together (oo-er) and the possibilities are endless. I recommend dark chocolate with toasted or ground almonds if the purse stretches. Dark chocolate and marmalade is similar to a famous round chocolate orange in a bright blue box, and for breakfast, such fun! Banana Caramel Milkshake, 36p

The weather is hotting up, and it seems like a lovely day to launch a new milkshake! But if you don’t have £3 to spend on a McDonalds or Five Guys one, here’s one I made earlier. If you’re intending on travelling with it, make sure to put it in a Thermos or similar flask, with an ice cube or two, else it might go a bit…rancid…in these warmer climes. Pumble, 20p

This cheeky little number is a cross between a pie and a crumble, a hot sweet pile of stewed fruits beneath a crumbly puff pastry topping. I admit to approaching my pies with borderline religious fervour; that is, in order to qualify as a pie, it must have a base and walls and a lid. This does not meet my high pie standards, but it is undeniably adorable in itself, and so the Pumble was born. You can use any kind of fruit here – I have made both an apple and a banoffee version – and am dreaming of a zesty tinned peach and mandarin version with a smattering of lime juice, too. The Pumble is a simple first recipe for children, too, who may be curious about helping in the kitchen. Serves 4-6 from 20p each. Caramel Banana Cake, 16p [A Year In 120 Recipes]

This cake is a cheap but luxurious twist on my original banana bread, slightly more moist and gooey than the first iteration, with a home made sticky syrup sauce to drizzle over the top, ideally warm from a jug. I have made this as a loaf cake and also as a round, Victoria sponge type cake, split in the middle with a buttercream style icing and extra syrup sandwiching it together. It can be as simple or as showstopper as you want it to be. If you keep frozen berries kicking about, scatter a few on top of the cake mixture as it goes into the oven; as it cooks, they will gently sink to suspend in the finished delicacy; if you stir them in, there is a risk they will all sink and give you a soggy bottom. If this happens, I generally allow the cake to cook completely before removing from the tin, level off the risen top so it is completely flat (a bread knife is best) and carefully turn it over …

Dollar Pancakes, 6p [A Year In 120 Recipes]

In case you ever find yourself wanting pancakes, but not having any eggs in the house (or bananas, or chia seeds, or flax seeds, or vegan egg replacer), here’s a cheeky cheaty recipe – because some things are just too good to keep to yourself. Serves 4-6, depending on appetite, from 6p each 150g plain flour, 7p  (65p/1.5kg, Sainsburys Basics) 2 tbsp cornflour, 5p (£1.30/500g, Sainsburys) 1 tsp baking powder, 4p (90p/100g, Sainsburys) A pinch of salt (optional), <1p (45p/750g, Sainsburys Basics) 2 tbsp sugar, 1p (80p/1kg, Sainsburys) 150ml milk (I use soy for vegan pancakes), 14p (90p/1 litre, Sainsburys) 2 tbsp water 2 tbsp oil, 3p (£3/3 litres vegetable or sunflower oil, Sainsburys) Weigh the flour and measure the cornflour into a large mixing bowl, add the baking powder, salt (if using) and sugar, and mix well to evenly distribute throughout the mixture. This piece started after an article in the Independent about the top 10 foods that we apparently throw away in the UK. I took to Twitter to ask people what usually ended up in their bin, and then spent a whole day and night answering hundreds of queries – some of them came up a lot, like bread and mushrooms, and some were rather more surprising, like ‘half a jar of caviar’ (not a problem I can say I have ever had, but I am here to help, and inverse snobbery is as ghastly as the original kind so please, resist the urge.) I have compiled them all here as an A-Z, and will keep this list going, and add to it regularly, as a handy reference point – so keep checking back! Beetroot Chocolate Loaf Cake

This Christmas period I have so far cooked four enormous meals in four different houses as four Christmas presents for friends and family –  it’s the best Christmas present I can offer – swooping in to someone else’s kitchen and taking the stress out of catering for large groups of people, repurposing the leftovers into a pile of ready meals for the freezer, before packing my suitcase and moving on to the next one. It’s been a marvellous way to spend the week – I have so far slept in six different beds in as many days and made a lot of new friends, drunk a lot of wine, lost two knives along the way and had glorious fun.
