Perfect roast potatoes are simply one of life’s greatest pleasures – one of the soft and easy comforts that transports me straight back to a wicker chair in my elderly (and now devastatingly dearly departed) Aunty Helens conservatory in her house in Plymouth, where I spent the summers of my childhood being chased around the garden by a large and furious goose called Charlie. Aunty Helen – as any great Greek Cypriot woman is intuitively inclined to – would feed us from the moment we awoke beneath hand-crocheted heavy blankets, until the moment we crawled satiated and delighted back beneath the same. It was at Aunty Helens that I learned about the birds and the bees, aged 9, leafing open-mouthed through More! magazine’s ‘Position Of The Fortnight’ from a pile of women’s magazines carefully concealed beneath a Readers Digest in the downstairs bathroom. Mushroom, Lentil & Ale Pie, 37p [Tin Can Cook]

This pie came about because firstly, I adore pie. It was my pregnancy craving, steak pie followed by cherry or apple pie. I would buy packets of Mr Kipling and polish them off by the half dozen. Something about the crumbling, yielding collapse of the pastry, the hot-or-cold, sweet-or-savoury, the lingering lubrication, satiation, of a layer of fat and gravy disappearing down my greedy gullet. I make a pie most weeks, more so since cooking vegan food than ever before. This particular pie came from a longing for something ‘meaty’, but not meat, of course. A hearty, wholesome, dark and brooding pie that would fool even the hardiest of carnivores. And so I rolled up my sleeves, and I got to work. (For the record, my friend Phil, the only ‘man’ I call when I need heavy stuff hulking about and my erstwhile recipe guinea pig, sat in my kitchen and scoffed half of it in one sitting. Peanut Butter Granola, 8p

I first made this for myself as I love peanut butter in the mornings, but not having a toaster, popping bread under the grill inevitably goes wrong when you have a child to get washed and socked and shoed in the mornings – so I cobbled this together and bunged it in a big jar. Perfect with hot milk, or cold, or even pop it in the microwave for a minute for a warm, soft, stodgy, comforting start to your day. There are endless variations to this too, just add a good oil, like coconut, in place of the peanut butter to hold your oats together (oo-er) and the possibilities are endless. I recommend dark chocolate with toasted or ground almonds if the purse stretches. Dark chocolate and marmalade is similar to a famous round chocolate orange in a bright blue box, and for breakfast, such fun! Golden syrup can be replaced with treacle, sugar, or any sweetening agent of your choice. If you feel like erring on the side of virtuous, chop a banana …

Chestnut, Apple & Stilton Roast, 36p

I buy vacuum packed chestnuts in December and January, when supermarkets mark them down to get rid of their Christmas stock. They have a long shelf life, so last well into the year. The cheapest I have found them was 20p a bag, in Asda last year, and my friend Caroline, a fellow yellow-sticker aficionado, has given me several packets of chestnut puree over the years. If chestnuts are outside of your price bracket, any nuts will do; search the snack aisle in the supermarket for cheap bags of redskin peanuts, or salted peanuts and cashews. Simply soak them in cold water overnight and rinse thoroughly to get rid of as much of the salt as possible. If you can bear it, a change of water and second soak strips away most of the lingering salinity, but it is a bit of a fanny to do. To make this vegan, simply swap the stilton for a vegan cheese – Asda again have a good vegan ‘garlic and chive alternative’, and Violife ‘Blu’ would also work …

I love Marmite on toast as a simple, quick and healthy breakfast, but my mischievous mind is always stretching possibilities and pondering, and for a while I had been wondering whether I could make Marmite *in* toast instead. Peanut Butter & Jam Crumble, 21p [Cooking On A Bootstrap]

I am near fanatical about peanut butter and jam – or peanut butter and jelly, for my readers across the pond. I have previously made these extremely popular PBJ cookies (vegan version here), PBJ microwave brownies for BBC Good Food, a PBJ semifreddo ice cream for a Small Boy and a PBJ pie with peanut butter hand-kneaded into the pastry, stuffed with thick, unctuous strawberry jam. My latest homage to my favourite marriage of flavours is this – the PBJ crumble I served at a lunch for 10 yesterday – met with a chorus of rapture as I placed it on the table (readers who are old enough – or young enough – to have seen the original Toy Story film, it was like offering it to a crowd of small green aliens…) It went down a treat with all ten of us, even the unenthusiastic crumble hater and the one who insisted she didn’t like peanut butter – and four of us had generous seconds (and six were mildly disappointed). I first had shakshuka the morning after a very heavy night before, with a friend who had come to rescue me from the vulgarities of my own hangover. He took me to a café, ordered me shakshuka, and watched, giggling to himself, as I slowly turned from a mumbling wreck into something that vaguely resembled a human being. I have made and loved it many times since, usually in varying degrees of unwellness, both self-inflicted and unfortunately less so. If you need any further convincing, it packs a vitamin C punch from the peppers and tomatoes, and the spices will wake you up and clear out any lurking nasties. As for the egg? Eggs are good for pretty much everything. (Vegans, replace the egg with a tin of chickpeas for the same protein hit but a completely different dish!) Simple Tomato & Bean Soup, 20p [A Girl Called Jack]

This simple staple started off as a tin of baked beans, thoroughly rinsed, plus a carton of chopped tomatoes – out of which I made a hearty, filling soup suitable for lunch or a light supper. I’ve jazzed it up a bit since then! And don’t be scared of rinsing baked beans, they are normally just haricot or borlotti or cannelini beans slathered in ‘that’ bright orange tomato sauce, and the value range versions are much cheaper than their plain counterparts. In case you’re interested, this recipe cost 15p per portion in 2012, and is up to 19p per portion 6 years later. Red Wine & Mushroom Risotto, 34p [A Girl Called Jack]

When I need easy but comforting food, I always turn to a large bowl of warm, flavourful rice – and using red wine as a base works beautifully. In the winter, serve this risotto in a deep bowl with a spoon, whilst snuggling under a thick blanket. Or it can make a special meal for two served with some lovely crusty bread, if you’re so inclined. My Mum used to serve us a version of this as children, served with kievs or sausages, so when I feel nostalgic I have mine with a couple of (veggie) sausages on the side. Mushroom Mac ‘n’ Cheese, 42p [from ‘Veganish’]

This is one of my favourite comfort meals, quick to assemble, using ingredients that I generally have kicking about the house, and can just be slung in the oven and forgotten about, left to slowly pull itself together in a haze of blissful creamy soft salty rich glorious goodness. I’ve just polished off my second bowl of it, and frankly, it’s too good not to share with you all, so here it is. It’s easy to make it vegan – replace the hard strong cheese and mozzarella with Violife or something similar, and the milk with coconut or almond or soya milk, depending on what you prefer. It’s easy to throw together, and the reward of a deep bowl of melting goodness far outweighs the minimal effort involved in making it. I consider this an essential part of my repertoire these days, and barely a week goes by without it. It freezes beautifully, too, so do double the recipe and sling some of it to one side for a lazy day. Serves three people, or …

These little weighty wistful whirls of whimsy came about entirely by accident. I was going to stay with friends in Manchester for the weekend, to all fling our small boys at one another for a raucous time, and I never like to accept hospitality empty handed. So, I set about making a hulking great fruit bread big enough to energise 3 grown men, 3 grown women, and 3 small and boisterous boys. I mixed it, kneaded it, left it to rise…and promptly forgot all about it until I was halfway across the country. Silly me. I came home to find it fermenting beautifully, tickling the top of the teatowel flung over the top of it. I gave it a ginger sniff, it smelled a lot like sourdough. Hot Nurse, 20p [Good Food For Bad Days]

This recipe is known as Hot Nurse in my household for its ability to flush out a blocked up nose, soothe a sore throat, chase away a hangover and revitalise my tired head. It is a real kick in the cookies; so those of you who choose the mild curries in restaurants may want to halve the ginger and curry powder quantities. For the rest of you, ladle it into a mug and take your medicine! Chickpea & Tomato Brunch Loaf, 16p [A Girl Called Jack]

This loaf first appeared in my first cookbook, A Girl Called Jack, and is a favourite weekend recipe of mine. It was based on a similar loaf from Economy Gastronomy, by Allegra McEvedy and Paul Merrett, using mashed chickpeas and sun dried tomatoes, but mine is, as ever, the more austere version. It is delightfully accidentally vegan, and robust enough for toasting, serving with a pile of grilled tomatoes or some kind of roasted red pepper dip. If you don’t finish it before it goes stale, the breadcrumbs make an excellent topping for a simple pasta dish, too. Makes 1 decent sized loaf, to serve 6 from 16p each.
