Anchoiade Devilled Eggs, 21p

Up until a few weeks ago, I had never had a devilled egg, let alone tried to make one. I had read about them with fascination in various novels, usually set in the American South or housewifely suburbs, passed around as canapes at fictitious afternoon parties by women who lived the kind of lives I could scarcely imagine, peppered with scandal and boredom, kitten heels and daytime martinis. Devilled eggs represented, to me, something otherworldly, something aspirational, something bordering on the celestially obscene. You don’t have to use Diet Coke to make the barbecue sauce for this recipe; if you don’t mind the sugar, ordinary full-fat will do instead. Chickpea, Carrot & Coriander Falafels [A Girl Called Jack]

This recipe uses tinned chickpeas, but can also use dried chickpeas if you have them available. Dried chickpeas work out cheaper but will need to be soaked in cold water for at least 8 hours before starting the recipe, and then need to be cooked (put in a pan, cover with water and boil vigorously for at least 10 minutes before draining and using). If you have dried chickpeas, use half the quantity of tinned, i.e. 200g. I like to serve the falafels accompanied by couscous made up with vegetable or chicken stock, lemon juice and coriander, and with green beans or another green vegetable. Last night I fancied a curry, a nice hot curry to warm the very cockles of my draughty flat, but like so many evenings of the dreaded ‘cooking for one’, I just couldn’t decide what curry to have. While testing recipes for my book this week, it was inevitable that I would start to put leftover ingredients together to come up with accidental dishes. This speedy and satisfying late lunch was born of some scraps of cooking bacon left over from Spring Piggy, and some sad looking Brie from the Courgette and Brie gratin. Nigella’s Lentil & Chestnut Soup, 48p

This recipe is adapted from ‘How To Eat’ by Nigella Lawson, who in turn adapted it from ‘an aromatic, velvety, manilla-coloured soup at Le Caprice’ in the late 1980s. The bootstrap adjustments and pricing are my own. The original recipe includes half a leek, which I have omitted out of laziness; I didn’t have one in and didn’t want to take a trip to the shop especially, but if you want to stick more closely to the original, slice it and add it at the same time as the onion. If chestnuts are a step too far outside of your comfort zone, replace with peanut butter instead; this variation benefits from a hefty whack of chilli and lemon, turning it into an entirely different meal, but a delicious one. It’s pronounced ‘Ree-yett’, and no, I didn’t know that either, having only ever seen it written down. The first time I heard the word out loud, I was having dinner at the cookery writer Xanthe Clay’s house in 2014 some time, and she produced a home made jar of rabbit rillettes. I’ve made corn bread about nine times this year and every time I do I think to myself “I must blog this recipe” as it’s one of my favourites.
