Vegan Rainbow Dhansak, 31p

Authentic dhansak recipes that I’ve found sometimes include tamarind sauce or fresh tamarind, which I didn’t have to hand, so I replicated the slightly sour note with a dash of lemon juice instead. I am aware that I am extremely lucky to have found this particular bag of stir fry veg so cheaply, but I am often asked by readers what to do with them that isn’t a stir fry, so when I swagged this one from the markdown chiller today I thought it an ideal opportunity to address this particular conundrum. If you don’t have a similar bargain to hand, you can make similar by adding roughly equal amounts of red and green cabbage, thinly sliced or thickly grated carrot, and some sweetcorn. Cheesy Tuna, Courgette & Mushroom Gratin, 65p

This recipe is a riff on the Courgette, Tomato and Brie Gratin from A Girl Called Jack, with some extra veg and protein added, and mushrooms for Vitamin D as the darker evenings draw in. You can use pretty much any veg you like in this; I toyed with a wrinkly red pepper in the fridge and fingered half a leek before deciding I could use them elsewhere and plumping for this particular combination. If you’d prefer a veggie version, simply swap the can of tuna for a can of beans or chickpeas to keep the heartiness and protein intact.   Serves 4, from 65p each. For many reasons, I am returning to a very strict groceries budget for the foreseeable future. Yesterday I went to the supermarket – in two separate trips, as I was on foot with a backpack – with a budget of twenty pounds. I uploaded my receipts on Twitter, but for those of you not on Twitter, I will post them as a separate post here later on. Roasted Carrot, Chickpea & Garlic Soup, 20p

I first made this soup a couple of years ago, a bit snuffly around the edges, with a sore throat and generally feeling a bit sorry for myself, and limping around tragically on a broken left foot. This may be the most self-pitying recipe introduction to date. But basically, I fancied something warm, and sweet, and comforting, and easy to do. Something I could fling in the oven and forget about, and get something good inside. Carrot led to roast carrot, and garlic, and some chickpeas for protein and good measure – and the result is a subtly spiced, hearty, sweet and delicious soup. I love how the cheapest can of beer can be enriched by half a dozen sausages and a few other ingredients for a homely, comforting, classic dinner – delicious with a pile of mash and some green veg. This recipe first appeared in A Girl Called Jack, and an adapted version was published in my Guardian recipe column in 2014. Simple Tomato & Bean Soup, 20p [A Girl Called Jack]

This simple staple started off as a tin of baked beans, thoroughly rinsed, plus a carton of chopped tomatoes – out of which I made a hearty, filling soup suitable for lunch or a light supper. I’ve jazzed it up a bit since then! And don’t be scared of rinsing baked beans, they are normally just haricot or borlotti or cannelini beans slathered in ‘that’ bright orange tomato sauce, and the value range versions are much cheaper than their plain counterparts. This soup was a soup to shake me out of a funk longer than any I have recently known. I had a serious accident one Saturday night in April and hit my head backwards on a concrete floor at some speed. I ended up with whiplash and concussion, both of which limited my ability to sleep, work, and in the case of the latter, have so much as a thought in my head. There are many different recipes entitled Love Soup – I’ve seen some rich chicken soup recipes, some with heady garlic and some deep red tomato soup ones. I did not mean to make this. I did not imagine it, did not plan it, did not conceive of it in advance. I wandered into my kitchen one midday in May with friends to feed, and myself, and pottered absently at the stove throwing whatever came to hand into my, wide, shallow pan. I very rarely cook with onions these days, as any great quantity of them upsets my stomach – such are the perks of growing older with a compromised immune system and a body that seems to find a new failing on a near-weekly basis – but I inexplicably find myself still with half a fridge drawer of them, red and white and peeling at the edges, and so I shrug and accept the consequences. A tin of cannellini beans at eye level, a bag of basic rice so old by now that when I bought it that it has cost 45p, 65p and now 45p again before I have reached the bottom. Humble Pie, 32p

This is a very simple recipe for days when you really need some kind of warm comfort, but you’re absolutely flat broke and a bit….spent. It can be customised to use whatever you have in the cupboard; I happened to have tofu in at the time of testing this one, which you can see in the photo, and it wasn’t my fave iteration if I’m honest. Any cooked meat or a can of beans or a pile of mushrooms will do. A pie is a pie is a pie, at the end of the day. I am rather fastidious about the use of the term ‘pie’; it needs to have walls, a base and a lid in order to qualify, but if you are in a hurry, or less pernickety, a casserole-with-a-hat will just about pass muster. Making your own pastry is simple, you can dip a toe in with this for 75p/450g, or pick up a bag of flour for 45p/1.5kg and find a good recipe to make your own. But I shan’t pretend …

Lettuce, Pea & Lemon Risotto by Jack Monroe

The idea of putting cold lettuce leaves into a warm dish may seem an unusual one, but it is one of my new favourite things. The idea is definitely not a revolutionary one; gently wilted lettuce has topped slick hot burgers for a hundred years or thereabouts, so there must be something in it. I found a bag of lettuce for 10p at my local Tesco Express, and have been folding it into everything ever since, much to the chagrin of my bunnies, who usually get to nibble on the bargains, but what they don’t know shan’t hurt them. If the idea really makes you shudder, then use a hardier leaf for this recipe, like spinach, chard or cabbage, but I promise you, the fresh, still-slightly-crisp surprise of a lettuce leaf in a creamy-soft risotto is a truly delightful one.
