Spiced Vegan Banana Bread, 11p

I almost had the audacity to call this recipe ‘Christmas-spiced Banana Bread’ as I am currently testing some new recipes for a December project (more on that below) but I didn’t think I could cope with the outrage of the Internet if I dared use the C-word halfway through September. So instead, euphemistically, this is an Autumn-spiced banana bread, warming, comforting, and pull-your-jumper-around-you warming delicious bliss. Based on the vegan banana bread recipe from A Girl Called Jack, but better. For best results you will need a small powerful blender to grind the spices into the sugar; I have used this one for years and absolutely swear by it as a blender, smoothie maker, curry paste machine and spice grinder, so it’s worth a look. This came about because I LOVE chocolate-chip brioche – so I decided to try to make some chocolate-chip bread as a replacement. Unfortunately, though, the chocolate chips all melted into the dough as I added warm water and I ended up with this Chocolate Tea Bread instead – but it was still delicious! Soda Bread, 38p [A Girl Called Jack]

You have a natural, free breadmaker in your palms and your knuckles – and this easy recipe with no proving or rising time is a great place to start. A lot of soda bread recipes use wholemeal flour, salt and buttermilk or yoghurt – but true to my usual style, I’ve pared it back to the basics (although you can add 1 teaspoon of salt to the flour if you like). I love Marmite on toast as a simple, quick and healthy breakfast, but my mischievous mind is always stretching possibilities and pondering, and for a while I had been wondering whether I could make Marmite *in* toast instead. 90’s Special Peanut & Cheese Loaf, 18p

This loaf was inspired by one in The Dairy Book Of Home Cookery, one of the only cookbooks I can remember my parents having when I lived at home. A meaty tome of 1000 simple recipes, I would flick through it for inspiration for my Home Economics lessons as a teenager. It has no recipe introductions and very scant instructions, but it is a comprehensive cookery course to rival any other. Some of the recipes I feel are best left back in the 1990s, like the banana and stilton sandwiches, but some of them stand the test of time as cornerstones and classics. Chickpea & Tomato Brunch Loaf, 16p [A Girl Called Jack]

This loaf first appeared in my first cookbook, A Girl Called Jack, and is a favourite weekend recipe of mine. It was based on a similar loaf from Economy Gastronomy, by Allegra McEvedy and Paul Merrett, using mashed chickpeas and sun dried tomatoes, but mine is, as ever, the more austere version. It is delightfully accidentally vegan, and robust enough for toasting, serving with a pile of grilled tomatoes or some kind of roasted red pepper dip. It’s quite soft due to the quantity of apples used, lending it a crumbly texture that makes it delicious to eat in a bowl with custard or natural yoghurt. I had a small gathering of friends for lunch yesterday – the recipes of which are numerous and will follow in good time – and as is usually the way when a gathering imbibe themselves on sun and soaking up well-deserved drinks, as I tidied up this morning (for I am a slattern, but also have concussion and took my sober self to bed early after such frivolity), I came across half a glass of warm beer that had been sitting on the table all evening. This piece started after an article in the Independent about the top 10 foods that we apparently throw away in the UK. I took to Twitter to ask people what usually ended up in their bin, and then spent a whole day and night answering hundreds of queries – some of them came up a lot, like bread and mushrooms, and some were rather more surprising, like ‘half a jar of caviar’ (not a problem I can say I have ever had, but I am here to help, and inverse snobbery is as ghastly as the original kind so please, resist the urge.) Beetroot Chocolate Loaf Cake

This Christmas period I have so far cooked four enormous meals in four different houses as four Christmas presents for friends and family –  it’s the best Christmas present I can offer – swooping in to someone else’s kitchen and taking the stress out of catering for large groups of people, repurposing the leftovers into a pile of ready meals for the freezer, before packing my suitcase and moving on to the next one. The quantity given for the tin of pineapple chunks is approximate. Some tins are 200g, some are 227g, so don’t worry about weighing and measuring – just throw about half the tin in! you can put the remaining pineapple chunks from the tin into an airtight container with just enough juice to cover and pop into the fridge to snack on or use in another recipe. Chickpea & Tomato Brunch Loaf [A Girl Called Jack]

This loaf is a favourite weekend recipe of mine, which is easily adapted to personal tastes and what you have in the cupboard. Sometimes I like to thoroughly mash the chickpeas for a smoother bread, and sometimes I chuck them in whole for a knobbly, crunchy texture. Delicious toasted or grilled with butter, or bacon, or an egg, or all three… Makes 1 small loaf: 240g canned chickpeas (drained weight) 300g plain white flour, plus a little extra for kneading a 7g sachet of fast acting dried yeast a handful of chopped fresh rosemary zest and juice of half a lemon, or a tablespoon of bottled lemon juice 1 large tomato, chopped into small chunks Drain the chickpeas, thoroughly rinse them, and tip them into a large mixing bowl. Mash with a potato masher to loosen the skins, and pick them off as the chickpeas separate (not an essential step but definitely worth it if you want a smooth bread – if you’re leaving the chickpeas whole then don’t worry about this!).
