Black Bean Tarkari, 38p [Cooking On A Bootstrap]

This recipe was, in part, inspired by a tarkari dish on the menu of my local Nepalese takeaway, Yak and Yeti. I had moved back to Southend from the dizzy heights of the busy big City, finished lugging several car-boots of boxes up two flights of stairs, and before I knew it, it was late and I was hungry. Rather than locate the box with the kitchen equipment in, I picked up a pile of the take-away menus that litter the hallways of a vacant home, and rifled through. Yak and Yeti caught my eye, if only for the name, and a curiosity about Nepalese cuisine. I made it myself some months later, substituting their chicken with my own tin of black beans, and it was a triumph. The original recipe uses mango, but mine uses tinned peaches, as they are cheaper. There are many different recipes entitled Love Soup – I’ve seen some rich chicken soup recipes, some with heady garlic and some deep red tomato soup ones. By chance, the ingredients for this were what I had kicking around in the fridge one Valentine’s Day, so this warming carrot, ginger and onion soup is mine. Chocolate, Chilli & Black Bean Soup, 64p [A Girl Called Jack]

I knock up this soup whenever I find myself in the grips of a piteous cold, or just generally need a bit of a kick in the cookies. It combines onions and garlic for detoxifying goodness, with chillies to fire your engine back up, tomatoes and carrots for essential vitamin C, beans for protein and chocolate because it’s a solution to almost everything. Plus dark chocolate and red wine are good for you, don’t you know? Sardine Rillettes, 25p [A Year In 120 Recipes]

It’s pronounced ‘Ree-yett’, and no, I didn’t know that either, having only ever seen it written down. The first time I heard the word out loud, I was having dinner at the cookery writer Xanthe Clay’s house in 2014 some time, and she produced a home made jar of rabbit rillettes. I gobbled half the jar, and still haven’t got around to procuring the recipe from her. For the uninitiated, rillettes is a chunky rough pâté, served a little cooler than room temperature and best smeared on warm toast. I’ve made corn bread about nine times this year and every time I do I think to myself “I must blog this recipe” as it’s one of my favourites. But the kitchen needs cleaning and the children need entertaining and there’s a wash to put on and a week goes by and I forget all about it. Ham, Pea & Mint Casserole, 30p [A Girl Called Jack]

This delicious ham casserole is adapted from a favourite old recipe of mine – where I would boil the ham joint whole to make a stock, before shredding it into the casserole. This faster version is no compromise, making a delicious hearty dinner in less than half the time. For an extra special twist, serve with crusty bread topped with melted cheese and green vegetables. Carrot Ribbon Pasta, 30p

This recipe was one of my favourite, simple ones from my first cookbook, A Girl Called Jack. Originally borne of a way to use up a bulk-buy bag of carrots (in the days before the guinea pig!), and to make veg exciting for a then two-year-old boy, it’s a simple, bright staple in my home today. In fact, I’ve just had it for my lunch. It’s beautiful, simple and delightful, and can be enjoyed all year round. Use whatever herbs you have to hand for the green sauce, I usually like basil or parsley in this one, but the Chief Herb Buyer in our house accidentally bought a ton of dill last week for a cooking project, and I’m reluctant to buy anything else until I’ve made a dent in the dill mountain in the fridge. Turns out it’s really yummy with dill, but if you don’t have it in or won’t use it in a week or two, don’t buy it specially – stick to a failsafe herb that’s easier to use up, like …

Courgette, Tomato & Cheese Gratin, 34p [A Girl Called Jack]

This recipe from my microwave series is based on a recipe from my book, A Girl Called Jack, that I see popping up on my Twitter feed and Facebook pages time and time again – it seems to be a definite favourite among my lovely readers! And so, I wondered if it was possible to make a portable microwave version, either for busy evenings, energy saving cooking, or even to pop into a jar in your work bag to stave off the boredom of yet another soggy cheese sandwich or expensive takeaway lunch. The microwave version has fewer ingredients than the original, oven-bake recipe – trying to keep it simple. Creamy Mustard Chicken & Winter Veg, £1.06

This hearty, saucy dish is delicious in the winter, served with root vegetables and rice or mashed potatoes, or in the summer, with green vegetables and tossed over pasta. Any mustard will do for this – I keep English in the fridge, but wholegrain or any other sort will work fine. Use this recipe as a base, and adapt as you wish. This dish was born of a sad-looking courgette in my fridge, half of a very large onion that was starting to dry out, and some bits and pieces from my cupboard. The rice makes this filling and comforting, and the cheese, tomato and slightly crisp courgettes have me reaching for a second portion even when I am pleasantly full. I make this for myself whenever I feel as though I am coming down with a cold. you know – when you’ve got that shaky, exhausted feeling and general self-pity. Instead of spending a fortune on various over-the-counter paracetamol and lemon drinks, I drag myself into the kitchen and cook myself a cure. This is called feisty soup for a reason: it’s a bit like hot and sour Chinese soup in a way, and if this doesn’t help shift whatever is wrong with you, I’m not sure what will.
