Peanut Butter Ice Cream, 43p

Caster sugar is generally more expensive than standard granulated sugar (currently £1.19 for 1kg compared to 69p for granulated at the supermarket) – but a few years ago I worked out that I could make my own substitute for it. All you need is a small powerful blender, and a bag of regular sugar, and you can blitz it up to a finely ground sugar suitable for making ice creams and floaty-light cakes with. Admittedly the blender is an initial investment, but I use mine every day for making soups from scrappy leftovers, hummus from cans of chickpeas, light and creamy batters for pancakes and yorkshire puddings – so it’s well worth digging into your pocket for in the long term, if you can. Peanut Butter & Banana Superpower Muffins, 10p

What do you do when you have a pile of black bananas sitting in the fruit bowl? I don’t even know how this happens – I generally work from home, bananas are my go-to snack because I can reach them and don’t have to do anything except peel them and shove them in. What do you make for breakfast when you have bananas, eggs, milk and flour? Banana pancakes of course! Ingredients (made 6 good sized pancakes.) Peanut Butter Granola, 8p

I first made this for myself as I love peanut butter in the mornings, but not having a toaster, popping bread under the grill inevitably goes wrong when you have a child to get washed and socked and shoed in the mornings – so I cobbled this together and bunged it in a big jar. Perfect with hot milk, or cold, or even pop it in the microwave for a minute for a warm, soft, stodgy, comforting start to your day. There are endless variations to this too, just add a good oil, like coconut, in place of the peanut butter to hold your oats together (oo-er) and the possibilities are endless. I recommend dark chocolate with toasted or ground almonds if the purse stretches. Dark chocolate and marmalade is similar to a famous round chocolate orange in a bright blue box, and for breakfast, such fun! Peanut Butter & Jam Crumble, 21p [Cooking On A Bootstrap]

I am near fanatical about peanut butter and jam – or peanut butter and jelly, for my readers across the pond. I have previously made these extremely popular PBJ cookies (vegan version here), PBJ microwave brownies for BBC Good Food, a PBJ semifreddo ice cream for a Small Boy and a PBJ pie with peanut butter hand-kneaded into the pastry, stuffed with thick, unctuous strawberry jam. This afternoon one of my readers got in touch via Twitter to ask me how to make these cookies vegan, for a friend. This is one of my favourite recipes for a rainy-day activity with my small boy, and as the weather draws in around us and we will be looking for more baking days than beach days, it seemed as good a time as any to convert it for my vegan friends. If you don’t have self raising flour kicking about, just use plain flour and add 1 level teaspoon of baking powder instead. Peanut Butter Frozen Yoghurt, 20p [A Girl Called Jack]

This simple recipe is a must for any peanut butter lovers. Its first incarnation was as peanut butter-flavoured yoghurt – made by mixing two of my staple food items together for a sweet treat – and it went from there. I don’t add sugar or syrup to sweeten this recipe when I make it as I like the slight tang of the peanut butter, but feel free to add a tablespoon or two if you wish. PBJ Granola, 8p

Granola is one of my most favourite breakfasts to have on standby, usually sling in the bottom of an oven that already has something else going on in it, in order to utilise the hot air already swilling around in there to create something else, practically for free, from store cupboard ingredients. My Small Boy loves this with his milk warmed through and a few tiny marshmallows dotted in as a treat; a nod to the 1990s classic cereal Lucky Charms, but without all of the E numbers that send us both doolally. This also works sprinkled over ice cream, as a topping for a crumble or a trifle, or eaten from the jar with your hands. Black Bean & Peanut Stew, 26p

The original version of this dish contained chicken, so I have substituted it with black beans here. It makes for a more filling meal, and a cheaper one, too, as beans and pulses are generally far cheaper than meat and pulses. Dried beans work out even cheaper, but they require a degree of organisation to remember to soak them the evening before, or even to know what you will be eating in advance. I have never managed to be quite so organised, so it would be disingenuous of me to urge you all to do so, but if you are a meal-planning person, bear in mind that dried pulses are a lot cheaper than the convenience of popping open a tin of pre-cooked ones. If you find black beans difficult to get hold of or not to your taste, you can use kidney beans, green lentils, or really, any bean will do.
