Instant Moonshine Mash, Tiny Veg, & Sausages, 58p

Moonshine Mash first appeared in Cooking On A Bootstrap, a bootleg riff on polenta made with potatoes and corn. I so named it because ‘hooch’, or moonshine, is typically made from potatoes or corn, and the idea of my own sneaky irreverent take on something usually considered quite special rather tickled me. This version takes the idea even further into the depths of culinary depravity, firstly by blending canned corn with its brine, with milk, to create a ‘corn milk’ – not dissimilar to the ‘carrot milk’ theory in the carrot cake oats in Tin Can Cook that equally delighted and horrified viewers of Daily Kitchen Live when I demonstrated it in lockdown. I then add instant mash, and the cheapest available variety, to this corn milk abomination, and you know what? It works really well. My son, who can be a frustratingly fussy eater at times, absolutely loved it. Sausage & Beer Casserole, 74p

I love how the cheapest can of beer can be enriched by half a dozen sausages and a few other ingredients for a homely, comforting, classic dinner – delicious with a pile of mash and some green veg. This recipe first appeared in A Girl Called Jack, and an adapted version was published in my Guardian recipe column in 2014. For vegetarian and vegan readers, I have found Linda McCartney Red Onion & Rosemary Sausages are the  best here, but you may have another preference!   Serves 2 generously from 74p each. A comforting classic that can be made easily with vegetarian sausages, if you like. My Small Boy loves this for his dinner, and so did I when I was his age! And now he makes it himself 🙂 Serves 4-6 from 18p each. (This post is not sponsored; I may earn a small commission if you click the links and purchase any products.) 25g butter or 2 tbsp cooking oil, 3p (£1.10/1l) 400g sausages, 70p (£1.19/681g) 100g plain flour, 3p (45p/1.5kg) pinch of salt, <1p 1 egg, 15p (89p/6 free range) 300ml milk, 17p (55p/1l) First grab a roasting dish, around 10 inches by 12 inches, or a deep round cake tin will do the same job. Pop the butter or oil, and sausages, into the tin. Cook at 200C for around 10 minutes, giving the tin a jostle halfway through to make sure they cook evenly.
