Brie & Bacon Risotto, 26p [A Girl Called Jack]

While testing recipes for my book this week, it was inevitable that I would start to put leftover ingredients together to come up with accidental dishes. This speedy and satisfying late lunch was born of some scraps of cooking bacon left over from Spring Piggy, and some sad looking Brie from the Courgette and Brie gratin. I have been criticised in the past by online commenters for using ‘posh cheese’ on a limited budget, but at £1.09 for 200g, a rich flavour, and creamy versatility, I find a hunk of Brie far more satisfying for my stomach and my wallet than plain old cheddar any day. Red Wine & Mushroom Risotto, 34p [A Girl Called Jack]

When I need easy but comforting food, I always turn to a large bowl of warm, flavourful rice – and using red wine as a base works beautifully. In the winter, serve this risotto in a deep bowl with a spoon, whilst snuggling under a thick blanket. Or it can make a special meal for two served with some lovely crusty bread, if you’re so inclined. My Mum used to serve us a version of this as children, served with kievs or sausages, so when I feel nostalgic I have mine with a couple of (veggie) sausages on the side. Cannellini, Cider & Garlic Risotto, 29p [Tin Can Cook]

I did not mean to make this. I did not imagine it, did not plan it, did not conceive of it in advance. I wandered into my kitchen one midday in May with friends to feed, and myself, and pottered absently at the stove throwing whatever came to hand into my, wide, shallow pan. I very rarely cook with onions these days, as any great quantity of them upsets my stomach – such are the perks of growing older with a compromised immune system and a body that seems to find a new failing on a near-weekly basis – but I inexplicably find myself still with half a fridge drawer of them, red and white and peeling at the edges, and so I shrug and accept the consequences. A tin of cannellini beans at eye level, a bag of basic rice so old by now that when I bought it that it has cost 45p, 65p and now 45p again before I have reached the bottom. Soffritto, 19p

For the last few months, I have been spying little jars of soffritto paste in the specialty foods aisles of various supermarkets. Snuggled next to such exoticisms as ancho chillies, dried porcini mushrooms, and other things that it is ‘nice to have but not essential’ (although Waitrose now feature artichoke hearts in their Essentials range, for the love of God!). I picked a jar up out of curiosity, as I like to imitate fancy ingredients myself, cheaply, on this here blog, to make them more accessible. I turned it over, bracing myself for the hard-to-find ingredients contained within, steeling my nerves for the inevitable reverse-engineering process to follow…and snorted with laughter. This jar of soothingly yellow paste contained such far-flung ingredients as celery, carrots and onion, with a dash of salt and pepper. I snapped a quick photo of the label, and went back to the vegetable aisle, picking up 3kg of carrots and onions and a bag of celery for less than the puny jar of paste would have cost. Don’t Throw That Away! An A-Z of leftovers, tired veg, etc and what to do with them.

This piece started after an article in the Independent about the top 10 foods that we apparently throw away in the UK. I took to Twitter to ask people what usually ended up in their bin, and then spent a whole day and night answering hundreds of queries – some of them came up a lot, like bread and mushrooms, and some were rather more surprising, like ‘half a jar of caviar’ (not a problem I can say I have ever had, but I am here to help, and inverse snobbery is as ghastly as the original kind so please, resist the urge.) I have compiled them all here as an A-Z, and will keep this list going, and add to it regularly, as a handy reference point – so keep checking back! Earthy Red Wine & Mushroom Risotto, Serves One. 36p. Still needing easy but comforting food with this cold, I decided to go for carbs and wine and goodness… I’ve never known anyone else to use red wine as a risotto base before – that’s not to say its not been done, I’ve just not seen it – but this works beautifully. As far as comfort food goes, I had finished this, from a bowl on the sofa wrapped in a heavy blanket, before I had finished typing the recipe… 30ml Red Wine, 14p (Table Wine, £3.48/750ml) 50g Mushrooms, 12p (97p/400g) 50g rice, 2p (40p/1kg) 1/2 Vegetable Stock cube in 400ml water, 1p (10 for 15p) Clove of Garlic, 3p (46p for 2 bulbs, avg 8 cloves per bulb) Tsp Mixed herbs, 1p (14p for a jar) Tomato purée, 2p (49p/200g) Splash of oil, 1p (Vegetable oil £4.50/3l) Heat a teaspoon of oil in a small frying pan, the one I used was 20cm across but I was only cooking for me!
